Goats' cheese, caramelised onion and rocket quiche recipe!


Recipe time! It's been a while.. On Sunday I made this delicious quiche based on a recipe from a Swedish food magazine. It is super easy to make, absolutely delicious, and if you're one of those - vegetarian!

Prep: 10 min Cook: Ages. Depends on your oven.. took almost an hour in my old school one Servings: 10


  • Filo pastry. I bought mine ready from Asda, you'll need a pack
  • 5-6 shallots
  • 60 gram of rocket
  • 10 cherry tomatoes
  • 3 egg
  • 3 dl milk. I used fat milk
  • 200 gram of goats' cheese
  • 1 dl regular grated cheese, like cheddar
  • rapeseed oil, butter, salt, pepper etc

Start by finely chopping the shallots, chop the rocket and half the cherry tomatoes. Fry the shallots in butter on low heat for about 10-15 minutes or until it caramelises. Pop some baking paper in a pan with a detachable frame (it's easier that way, trust me) and carefully put oil on it so that it doesn't stick to the pastry. Melt 25 g of butter. Layer one sheet of filo pastry in the pan and brush the butter on top of it. Repeat with the rest of the sheets until the pan is completely covered. Let the pastry hang over the frame, you can easily remove it after. Whisk egg, milk, salt and pepper together and add the onions, rocket and small pieces of goats' cheese. Pour it in the pan and add the tomatoes into the pan and top it all off with grated cheese, lots of it. Pop the pan in the middle of the oven on mark 6 or 200 degrees for about 40 min. Now, mine wasn't done at all after 40 minutes so I waited an additional 20 minutes until it was ready. I also covered it with foil towards the end to not burn the edges too much. Let the quiche cool down for 30-60 min and decorate it with rocket, chopped shallots and tomatoes. Eat it ljummen (there's no direct good translation for this stupid word but it basically means warm-ish/lukewarm haha) with other foods on the side!
